The founder of Benihana, Hiroaki Aoki, was born in Tokyo, Japan in 1938. He came to the United States in 1960 and trained as a sushi chef at the Japanese Village Restaurant in New York City. In 1964, he opened his own sushi restaurant called Benihana Japanese Steakhouse on West 56th Street.

Aoki wanted to create a unique dining experience for his customers and decided to use Hibachi grills to cook the food. He also added entertainment value by having the chefs perform tricks with the knives and food. The Hibachi steak was originally the only entree offered at Benihana. The menu has since expanded to include sushi and sashimi, as well as chicken, shrimp, and vegetables.
